Description

Juicy grilled chicken marinated in honey, lime, garlic and cilantro, served with a fresh, vibrant mango salsa for a bright and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 Tbsp honey
  • 2 Tbsp fresh lime juice (about 1 lime)
  • 1 Tbsp olive oil
  • 2 garlic cloves, minced
  • 2 Tbsp chopped fresh cilantro
  • Salt and pepper, to taste
  • 1 ripe mango, diced
  • 1/2 red bell pepper, finely chopped
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeds removed and minced (optional)
  • 2 Tbsp fresh lime juice (for salsa)
  • 1 Tbsp chopped cilantro (for salsa)
  • Pinch of salt (for salsa)

Instructions

  1. In a bowl, whisk together honey, lime juice, olive oil, garlic, cilantro, salt and pepper to make the marinade.
  2. Place chicken breasts in a zip‑top bag or shallow dish; pour half the marinade over the chicken. Reserve the rest for basting or serving.
  3. Marinate in the refrigerator for at least 30 minutes (up to 2 hours).
  4. While chicken marinates, in a separate bowl combine diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, cilantro and a pinch of salt. Stir gently and set aside to let the flavors meld.
  5. Preheat grill or grill pan over medium‑high heat. Lightly oil the grates.
  6. Remove chicken from marinade and grill 5–7 minutes per side, or until internal temperature reaches 165 °F (74 °C), basting once with reserved marinade.
  7. Once done, transfer chicken to a plate and let rest for 5 minutes.
  8. Slice or serve whole, topped with a generous spoonful of mango salsa.

Notes

  • Can substitute chicken thighs for juicier results; adjust cooking time accordingly.
  • Make salsa ahead and refrigerate for up to an hour to deepen flavor.
  • For extra zing, add zest of ½ lime to salsa.
  • If you like heat, leave some jalapeño seeds in or add a dash of hot sauce.
