Description

A flavorful Honey Dijon Greek Chicken Marinade that combines tangy lemon juice, sweet honey, and aromatic herbs to create a juicy and tender grilled chicken perfect for a healthy and delicious meal.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breast halves

Marinade

  • ½ cup olive oil
  • ½ cup lemon juice
  • ¼ cup dijon mustard
  • ¼ cup honey
  • 3 Tbsp dried minced onion
  • 2 Tbsp oregano
  • 2 tsp paprika
  • 6 garlic cloves, minced
  • ¼ tsp cayenne pepper
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the chicken: Pound the chicken breasts to an even thickness using a meat mallet to ensure even cooking, then place them in a gallon freezer bag or shallow pan.
  2. Make the marinade: In a medium bowl, whisk together olive oil, lemon juice, dijon mustard, honey, dried minced onion, oregano, paprika, minced garlic, cayenne pepper, salt, and black pepper until fully combined.
  3. Marinate the chicken: Pour the marinade over the chicken breasts, ensuring they are thoroughly coated. Seal the bag or cover the pan and refrigerate for a few hours or overnight for maximum flavor infusion.
  4. Preheat the grill: When ready to cook, preheat your grill to medium-high heat to prepare for cooking the chicken.
  5. Grill the chicken: Remove the chicken from the marinade and place on the grill. Cook until a meat thermometer inserted into the thickest part of the chicken breasts reads 165ºF, ensuring the chicken is safely cooked through.

Notes

  • For best results, marinate the chicken overnight to deepen the flavors.
  • Adjust the cayenne pepper according to your spice preference.
  • If you don’t have a grill, you can also cook the chicken in a grill pan on the stovetop.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165ºF without overcooking.
  • Serve with a side of grilled vegetables or a fresh Greek salad to complement the flavors.
