- 2 cups cooked jasmine rice (preferably day-old)
- 1/2 lb shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup frozen peas and carrots mix
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
- Add the remaining oil to the skillet and scramble the beaten eggs until just set. Push to the side.
- Add garlic, peas, and carrots to the pan, sauté for 2-3 minutes until softened.
- Add the cooked rice, breaking up clumps and mixing with the vegetables and eggs.
- Stir in the soy sauce and sesame oil, mixing well to coat the rice evenly.
- Return the shrimp to the pan, add green onions, and stir-fry for another 2 minutes.
- Season with salt and pepper to taste, then serve hot.
Notes
- Use cold, day-old rice for the best texture.
- Adjust soy sauce and seasoning to taste.
- You can add other vegetables like corn or bell peppers if desired.
