Description

This Hearty Sausage Spinach Mushroom Egg Bake is a delicious and satisfying breakfast casserole featuring Italian sausage, fresh spinach, mushrooms, and mozzarella cheese baked in a fluffy egg mixture. Perfect for a crowd or meal prep, it offers a balanced combination of protein and vegetables with warm, savory flavors.

Ingredients

Scale

Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sausage and Vegetables

  • 1 pound Italian sausage
  • 3 cups fresh spinach
  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil

Cheese

  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked, about 6–8 minutes. Use a spatula to break it up as it cooks. Once done, transfer the sausage to a plate and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until browned and tender. Then stir in the fresh spinach and sauté just until wilted. Remove the skillet from heat.
  4. Mix Eggs and Seasonings: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
  5. Combine All Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir thoroughly to evenly distribute all ingredients.
  6. Assemble in Baking Dish: Pour the combined mixture into the prepared 9×13-inch baking dish. Use a spatula to smooth the top evenly.
  7. Bake the Casserole: Place the dish in the oven and bake for 30–35 minutes, or until the center is just set and the edges have turned a golden brown color.
  8. Cool and Serve: Remove the egg bake from the oven and allow it to cool for about 5 minutes before slicing into 12 servings. Serve warm and enjoy!

Notes

  • For extra flavor, consider adding herbs like oregano or thyme to the egg mixture.
  • This dish can be prepared a day ahead and refrigerated; reheat slices in the oven or microwave before serving.
  • Use turkey sausage for a leaner option to reduce fat content.
  • Vegetarian option: Omit sausage and add extra vegetables or plant-based sausage alternatives.
  • Ensure the baking dish is greased well to make cutting and serving easier.
