Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook the Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked, about 6–8 minutes. Use a spatula to break it up as it cooks. Once done, transfer the sausage to a plate and set aside.
- Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until browned and tender. Then stir in the fresh spinach and sauté just until wilted. Remove the skillet from heat.
- Mix Eggs and Seasonings: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
- Combine All Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir thoroughly to evenly distribute all ingredients.
- Assemble in Baking Dish: Pour the combined mixture into the prepared 9×13-inch baking dish. Use a spatula to smooth the top evenly.
- Bake the Casserole: Place the dish in the oven and bake for 30–35 minutes, or until the center is just set and the edges have turned a golden brown color.
