Ingredients
Scale
Chicken and Stuffing
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cups mushrooms (finely chopped – cremini, button, or a mix)
- 2 cloves garlic (minced)
- 1/4 cup finely chopped onion or shallot
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
For Baking
- Cooking spray or additional olive oil for baking
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or olive oil to prevent sticking.
- Sauté the Mushroom Filling: In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the finely chopped mushrooms, onion, minced garlic, dried thyme, salt, and black pepper. Cook for 6 to 8 minutes, stirring occasionally until the mushrooms release their moisture and become golden brown. Remove from heat and stir in the grated Parmesan cheese and chopped fresh parsley. Allow the filling mixture to cool slightly to make it easier to handle.
- Prepare Chicken Breasts: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being cautious not to cut all the way through. This pocket will hold the mushroom filling.
- Stuff the Chicken: Spoon the mushroom mixture into each chicken breast pocket, filling them generously. If needed, secure the openings with toothpicks to keep the stuffing inside during baking.
- Season and Oil the Chicken: Place the stuffed chicken breasts in the prepared baking dish. Lightly spray or brush olive oil over the tops of the chicken. Season with a bit more salt and pepper if desired for enhanced flavor.
- Bake to Perfection: Bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). This ensures the chicken is safe to eat and remains juicy.
- Rest before Serving: Remove the chicken from the oven and let it rest for 5 minutes. This resting period helps the juices redistribute for a moist, tender bite. Remove toothpicks before serving.
Notes
- For extra richness, add a slice of mozzarella or Swiss cheese inside the chicken pockets along with the mushrooms before baking.
- This dish pairs beautifully with roasted vegetables, quinoa, or a fresh side salad for a well-rounded meal.
- Leftovers can be stored in an airtight container and reheated gently for meal prep or next-day meals.
