Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 teaspoon ground turmeric
  • 6 cups low-sodium chicken broth
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 cups chopped kale or spinach
  • Juice of 1 lemon
  • Salt, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, zucchini, and turmeric. Cook for another 5 minutes, stirring occasionally.
  3. Pour in chicken broth and add chicken, thyme, and black pepper. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until chicken is cooked through.
  4. Remove chicken, shred it with two forks, and return it to the pot.
  5. Stir in kale or spinach and cook for 2–3 more minutes until wilted.
  6. Add lemon juice and adjust salt to taste. Garnish with fresh parsley and serve warm.

Notes

  • Use bone-in chicken for deeper flavor and added nutrients.
  • This soup freezes well and is great for meal prep.
  • Add a pinch of cayenne pepper for an extra immune kick.
