- 2 cups cooked chicken breast, shredded
- 1/2 cup plain Greek yogurt
- 1 tbsp mayonnaise (optional for creaminess)
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup red grapes, halved (optional)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- In a large bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, salt, and pepper. Mix well.
- Add shredded chicken, celery, red onion, grapes (if using), and parsley to the bowl.
- Stir until all ingredients are evenly coated and well combined.
- Taste and adjust seasoning if needed. Chill for at least 15 minutes before serving.
- Serve on whole grain bread, in a wrap, or over lettuce leaves.
Notes
- For extra flavor, add chopped nuts like almonds or walnuts.
- Use rotisserie chicken for a quick shortcut.
