Description

This Healthy Chicken Salad is a light and nutritious twist on the classic, made with tender shredded chicken, Greek yogurt, crunchy veggies, and fresh herbs. Perfect for meal prep, sandwiches, or lettuce wraps.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup plain Greek yogurt
  • 1 tbsp mayonnaise (optional for creaminess)
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red grapes, halved (optional)
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a large bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, salt, and pepper. Mix well.
  2. Add shredded chicken, celery, red onion, grapes (if using), and parsley to the bowl.
  3. Stir until all ingredients are evenly coated and well combined.
  4. Taste and adjust seasoning if needed. Chill for at least 15 minutes before serving.
  5. Serve on whole grain bread, in a wrap, or over lettuce leaves.
