- 2 cups cooked chicken breast, shredded or diced
- 1 medium apple (Granny Smith or Honeycrisp), cored and diced
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise (optional)
- 1 tablespoon Dijon mustard
- 1 celery stalk, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tablespoon fresh lemon juice
- Salt and pepper, to taste
- 4 whole wheat tortillas (8-inch)
- 1 cup mixed greens (spinach, arugula, or lettuce)
- Optional: 2 tablespoons chopped walnuts or pecans
Instructions
- In a medium bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, and lemon juice. Stir until smooth.
- Add shredded chicken, diced apple, chopped celery, and red onion. Mix well to coat all ingredients.
- Season mixture with salt and pepper to taste. If desired, fold in chopped nuts for extra crunch.
- Lay out the whole wheat tortillas and distribute mixed greens evenly in the center of each.
- Top greens with equal portions of the chicken–apple mixture.
- Fold in the sides of the tortilla and roll tightly to form the wrap.
- Slice each wrap in half on a diagonal and serve immediately, or wrap in parchment and refrigerate up to 2 days for later enjoyment.
Notes
- Use Greek yogurt instead of mayo to reduce fat and boost protein.
- Choose tart apples for a nice flavor contrast.
- For extra flavor, add a teaspoon of fresh chopped herbs like parsley or tarragon.
