Description

A light, nutritious wrap combining lean chicken, crisp apples, and crunchy veggies in a whole wheat tortilla, perfect for a healthy lunch or picnic.


Ingredients

  • 1 medium apple (Granny Smith or Honeycrisp), cored and diced
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise (optional)
  • 1 tablespoon Dijon mustard
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • 4 whole wheat tortillas (8-inch)
  • 1 cup mixed greens (spinach, arugula, or lettuce)
  • Optional: 2 tablespoons chopped walnuts or pecans

Instructions

  1. In a medium bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, and lemon juice. Stir until smooth.
  2. Add shredded chicken, diced apple, chopped celery, and red onion. Mix well to coat all ingredients.
  3. Season mixture with salt and pepper to taste. If desired, fold in chopped nuts for extra crunch.
  4. Lay out the whole wheat tortillas and distribute mixed greens evenly in the center of each.
  5. Top greens with equal portions of the chicken–apple mixture.
  6. Fold in the sides of the tortilla and roll tightly to form the wrap.
  7. Slice each wrap in half on a diagonal and serve immediately, or wrap in parchment and refrigerate up to 2 days for later enjoyment.
