- 3 ripe bananas
- 2 cups old-fashioned rolled oats
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
- In a blender, combine all ingredients except optional add-ins. Blend until smooth.
- Stir in chocolate chips or nuts if using.
- Divide batter evenly among muffin cups.
- Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
