Description

This Ground Turkey Sweet Potato Casserole is a nutritious, comforting dinner made with lean ground turkey, tender roasted sweet potatoes, and a flavorful blend of spices. It’s finished with melted cheese on top for a cozy, satisfying meal you can feel good about serving.


Ingredients

  • 1 lb ground turkey

  • 1 tbsp olive oil

  • 1 small onion (chopped)

  • 2 cloves garlic (minced)

  • 2 medium sweet potatoes (peeled and diced)

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp paprika

  • 1/2 tsp ground cumin

  • 1/2 tsp dried thyme or Italian seasoning

  • 1 cup shredded mozzarella or cheddar cheese

  • 1/4 cup chicken broth (optional, for moisture)

 

  • Fresh parsley or green onions (for garnish)


Instructions

  • Preheat oven: to 400°F (200°C). Lightly grease a 9×13-inch casserole dish.

  • Roast the sweet potatoes: Toss diced sweet potatoes with 1/2 tbsp olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20–25 minutes, until just tender.

  • Cook the turkey: While the potatoes roast, heat remaining olive oil in a large skillet over medium heat. Add onion and cook until soft, about 4–5 minutes. Add garlic and cook 1 minute more. Add ground turkey, cumin, thyme, and a pinch of salt and pepper. Cook until turkey is browned and cooked through, about 7–8 minutes.

  • Combine and layer: In a large bowl or directly in the baking dish, combine cooked sweet potatoes and turkey mixture. Add chicken broth if mixture seems dry. Stir to combine evenly.

  • Top with cheese: Sprinkle shredded cheese evenly over the top.

  • Bake: Bake in the oven for 10–15 minutes, or until cheese is melted and bubbly.

 

  • Serve: Let cool slightly. Top with fresh parsley or green onions if desired.
