Instructions

Preheat oven: to 400°F (200°C). Lightly grease a 9×13-inch casserole dish.

Roast the sweet potatoes: Toss diced sweet potatoes with 1/2 tbsp olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20–25 minutes, until just tender.

Cook the turkey: While the potatoes roast, heat remaining olive oil in a large skillet over medium heat. Add onion and cook until soft, about 4–5 minutes. Add garlic and cook 1 minute more. Add ground turkey, cumin, thyme, and a pinch of salt and pepper. Cook until turkey is browned and cooked through, about 7–8 minutes.

Combine and layer: In a large bowl or directly in the baking dish, combine cooked sweet potatoes and turkey mixture. Add chicken broth if mixture seems dry. Stir to combine evenly.
