Ingredients

Units Scale

Ground Beef:

  • 1 lb ground beef

Zucchinis:

  • 2 medium zucchinis, diced

Sweet Potato:

  • 1 medium sweet potato, peeled and diced

Onion:

  • 1 small onion, chopped

Garlic:

  • 3 cloves garlic, minced

Spices:

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Oil:

  • 2 tablespoons olive oil

Garnish:

  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat the Skillet: In a large skillet, heat the olive oil over medium heat.
  2. Brown the Beef: Add ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed.
  3. Sauté Onion and Garlic: Stir in the chopped onion and minced garlic. Cook for 3–4 minutes until softened.
  4. Add Sweet Potato and Seasonings: Add diced sweet potatoes along with smoked paprika, oregano, salt, and pepper. Stir to coat the veggies and beef.
  5. Cook Until Tender: Cover the skillet and cook for 10–15 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Add Zucchini: Stir in the diced zucchini. Cook uncovered for 5–7 minutes, or until zucchini is tender but still slightly crisp.
  7. Taste and Adjust: Taste and adjust seasonings if needed.
  8. Serve: Remove from heat. Garnish with chopped fresh parsley if desired and serve hot.

Notes
