These Ground Beef Enchiladas are a family favorite! Made with seasoned beef, plenty of melty cheese, and smothered in rich enchilada sauce, they’re baked until bubbly and golden. Perfect for a weeknight dinner or a crowd-pleasing dish to bring to a potluck.
Ingredients

1 lb ground beef

1/2 small onion, diced

2 cloves garlic, minced

1 tsp chili powder

1/2 tsp cumin

1/2 tsp paprika

1/4 tsp salt

1/4 tsp black pepper

1 can (10 oz) red enchilada sauce (plus extra for topping)

1 1/2 cups shredded cheddar cheese (or Mexican blend)

8 flour tortillas (6- to 8-inch size)

Fresh cilantro, chopped (optional, for garnish)

Sour cream (optional, for serving)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook beef mixture: In a large skillet over medium heat, cook the ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.

Add seasonings: Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute.

Mix in sauce: Add about 1/2 cup of enchilada sauce and 1/2 cup of shredded cheese to the beef mixture. Stir until combined and heated through.

Fill tortillas: Spoon the beef mixture evenly into each tortilla, roll them up, and place seam-side down in the prepared baking dish.

Top and bake: Pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.

Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and slightly golden.

Garnish and serve: Sprinkle with chopped cilantro and serve with sour cream if desired.
