- 200g paneer, cut into cubes
- 1 tbsp olive oil
- 1/2 tsp paprika or Kashmiri red chili powder
- 1/4 tsp turmeric powder
- Salt to taste
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 bell pepper (any color), chopped
- 1/4 cup chopped fresh cilantro or mint
- For the dressing:
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp cumin powder
- 1/2 tsp chaat masala
- Salt and black pepper to taste
Instructions
- In a bowl, toss paneer cubes with olive oil, paprika, turmeric, and salt. Let marinate for 10–15 minutes.
- Grill paneer cubes on a grill pan or skewer over medium heat for 5–7 minutes, turning to brown all sides. Set aside to cool slightly.
- In a large bowl, combine cucumber, cherry tomatoes, red onion, bell pepper, and herbs.
- In a small bowl, whisk together lemon juice, olive oil, cumin powder, chaat masala, salt, and pepper.
- Add grilled paneer to the salad and drizzle with the dressing.
- Toss gently and serve immediately, slightly warm or at room temperature.
Notes
- Use tofu instead of paneer for a vegan version.
- Add greens like arugula or baby spinach for extra volume.
- Paneer can be air-fried or pan-fried if grilling isn’t an option.
