Instructions

  1. Prepare the Yogurt Marinade: In a medium bowl, whisk together the Greek yogurt, olive oil, minced garlic, lemon juice, ground cumin, smoked paprika, salt, black pepper, and chopped parsley until well combined. Set aside 1/2 cup of this mixture in a separate bowl to use later as a sauce.
  2. Marinate the Chicken: Place the chicken breasts into a resealable plastic bag or shallow dish and pour the remaining yogurt marinade over them. Toss the chicken to coat evenly, cover, and refrigerate for at least 30 minutes or up to 8 hours to allow the flavors to infuse and tenderize the meat.
  3. Preheat the Grill: When ready to cook, preheat your grill to medium-high heat to ensure it’s hot enough to create beautiful grill marks and cook the chicken thoroughly.
  4. Grill the Chicken: Remove the chicken breasts from the marinade, letting any excess drip off. Grill the chicken for 5–7 minutes per side or until the internal temperature reaches 165°F (74°C) and the outside has nice, charred grill marks. Avoid flipping too often to ensure even cooking.
  5. Rest and Serve: Allow the grilled chicken to rest for a few minutes after cooking to let the juices redistribute. Serve the chicken breasts with the reserved yogurt sauce spooned over or on the side, garnished with extra chopped parsley and lemon wedges if desired.
