Description

This vibrant and moist Green Cake features the zesty flavor of lime, enhanced by lime-flavored gelatin and fresh lime juice. Perfect for festive occasions like St. Patrick’s Day or a refreshing spring dessert, it offers a bright citrus twist on a classic white cake mix. The optional lime glaze adds a sweet and tangy finish, making this cake as delicious as it is eye-catching.

Ingredients

Scale

Cake Ingredients

  • 1 box white cake mix
  • 1 (3 oz) box lime-flavored gelatin (like Jell-O)
  • ¾ cup water
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • Optional: a few drops green food coloring for a more vibrant color

Lime Glaze or Frosting (optional)

  • 1 cup powdered sugar
  • 1–2 tablespoons lime juice
  • ½ teaspoon lime zest

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, or alternatively, prepare two 8-inch round pans to prevent the cake from sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the white cake mix and lime gelatin powder thoroughly. Add water, vegetable oil, eggs, lime zest, fresh lime juice, and if desired, a few drops of green food coloring. Using an electric mixer on medium speed, beat the mixture for about 2 minutes until the batter is smooth and well combined.
  3. Bake the Cake: Pour the batter into your prepared pan(s). Place in the oven and bake for 30 to 35 minutes. Check doneness by inserting a toothpick in the center – it should come out clean when the cake is fully baked.
  4. Cool the Cake: Remove the cake from the oven and allow it to cool completely in the pan before applying any glaze or frosting.
  5. Prepare Lime Glaze (optional): While the cake cools, whisk together powdered sugar, lime juice, and lime zest in a small bowl until smooth.
  6. Apply Glaze or Frosting: Drizzle the lime glaze over the cooled cake or spread it evenly for a light frosting. Alternatively, top with whipped cream or cream cheese frosting if preferred.

Notes

  • This cake is an excellent festive option for spring gatherings or St. Patrick’s Day celebrations.
  • For an even fluffier texture, try substituting sour cream for half of the vegetable oil.
  • If desired, you can substitute the glaze with whipped cream or cream cheese frosting to vary the flavor and texture.
  • Adding green food coloring is optional but helps enhance the cake’s vibrant color.
