Ingredients

1 large cucumber, chopped

4 medium tomatoes, chopped (or 1 pint cherry tomatoes, halved)

1/2 red onion, thinly sliced

1 green bell pepper, sliced (optional)

1/2 cup kalamata olives

4 oz feta cheese, cut into cubes or crumbled

2 tbsp extra virgin olive oil

1 tbsp red wine vinegar

Salt and black pepper, to taste

Instructions

In a large bowl, combine the cucumber, tomatoes, red onion, bell pepper (if using), and olives.

Add the feta cheese on top.

In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

Pour the dressing over the salad and toss gently to combine.

Taste and adjust seasoning if needed. Add a squeeze of lemon juice if desired.
