Scale
Main Ingredients
- 1 pound ground chicken
- ¼ cup diced red onion
- 3 garlic cloves, minced
- ¼ cup sun-dried tomatoes, finely chopped
- 1 cup loosely packed baby spinach, roughly chopped
- 1 tablespoon chopped fresh dill
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
For Serving
- Butter lettuce leaves
- Tzatziki sauce
- Crumbled feta cheese
- Sliced onion
- Sliced tomato
- Sliced avocado
Instructions
- Make the burger patties: In a medium bowl, combine the ground chicken, diced red onion, minced garlic, finely chopped sun-dried tomatoes, roughly chopped baby spinach, chopped fresh dill, dried oregano, kosher salt, and ground black pepper. Use your hands to thoroughly mix all ingredients together. Divide the mixture into four equal portions and shape each into a large, even patty.
- Cook the patties: Heat the extra virgin olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for about 5 minutes on each side, or until they are golden brown and cooked through to an internal temperature of 165°F (74°C). Alternatively, these patties can be grilled over medium heat until cooked through and nicely charred.
- Assemble the chicken burger: You can enjoy the patties plain or assemble them into burgers. Place each patty on a butter lettuce leaf and top with tzatziki sauce, crumbled feta cheese, sliced onion, sliced tomato, and sliced avocado, or your favorite toppings and condiments.
Notes
- Ensure patties are cooked to an internal temperature of 165°F (74°C) for food safety.
- Sun-dried tomatoes add a sweet and tangy flavor, but can be omitted if unavailable or substituted with roasted red peppers.
- Use fresh herbs like dill and oregano for authentic Greek flavor.
- These burgers are great served wrapped in lettuce for a low-carb option.
- Feel free to switch spinach with kale or arugula for different greens.
