- 1/2 cup (115g) unsalted butter, softened
- 2 1/2 cups (300g) powdered sugar
- 3 tbsp Grape Crush soda (adjust for consistency)
- 1/2 tsp vanilla extract
- A pinch of salt (optional)
Instructions
- Prepare the Oven and Cupcake Pan: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners to prevent sticking and ensure easy removal.
- Make the Cupcake Batter: In a large bowl, combine the yellow cake mix, Grape Crush soda, water, vegetable oil, eggs, and vanilla extract. Using an electric mixer on medium speed, mix for 2-3 minutes until the batter is smooth and evenly combined.
- Bake the Cupcakes: Evenly divide the batter among the cupcake liners, filling each about two-thirds full. Bake in the preheated oven for 18-22 minutes until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare the Grape Frosting: In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Add the Grape Crush soda, vanilla extract, and a pinch of salt if desired. Continue beating until the frosting is smooth and fluffy. If the frosting is too thick, add more soda to adjust consistency.
