- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or rotini pasta
- 1 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- Chopped fresh parsley, for garnish (optional)
Instructions
- In a large skillet or saucepan, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
- In the same pan, add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
- Add uncooked pasta and Italian seasoning. Stir, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is tender.
- Reduce heat and stir in Parmesan cheese until melted and the sauce is creamy.
- Return the chicken to the pan and stir to combine. Cook for another 1–2 minutes until heated through.
- Garnish with fresh parsley if desired and serve warm.
Notes
- Add spinach or steamed broccoli for a veggie boost.
- Use freshly grated Parmesan for the smoothest, richest sauce.
- Leftovers can be stored in the fridge for up to 3 days and reheated with a splash of cream or broth.
