Sauce and Seasoning
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon fish sauce (optional)
- 1/2 teaspoon freshly ground black pepper

Instructions
- Cook Noodles: Cook the noodles according to the package instructions until al dente. Drain them and set aside, reserving 1/4 cup of the pasta water for later use.
- Sauté Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 to 2 minutes until fragrant but not browned to avoid bitterness.
- Add Sauces and Seasoning: Stir in the oyster sauce, soy sauce, brown sugar, fish sauce (if using), and freshly ground black pepper. Cook for another minute to let the flavors meld.
- Toss Noodles in Sauce: Add the cooked noodles to the skillet and toss well to coat them evenly with the sauce. Add a splash of the reserved pasta water if the sauce needs loosening for better coating.
- Add Cheese and Garnishes: Sprinkle grated Parmesan cheese over the noodles and toss again until everything is well combined. Serve the noodles hot, garnished with sliced green onions and sesame seeds if desired.
Notes
- You can easily add shrimp, chicken, or vegetables to make it a full meal.
- For a vegetarian version, use vegetarian oyster sauce and skip the fish sauce.
