Description

A hearty and flavorful Garlic Butter Steak and Potatoes Skillet featuring tender ribeye or sirloin steaks cooked to perfection alongside crispy, golden potatoes all tossed in a rich garlic butter sauce. This one-pan meal is perfect for an easy yet impressive dinner.

Ingredients

Scale

Steak

  • 2 (6-8 oz) ribeye or sirloin steaks (or your preferred cut)
  • 1 tsp paprika
  • Salt and pepper to taste

Potatoes

  • 4 medium-sized potatoes (Yukon Gold or red potatoes work best)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp onion powder (optional)

Garlic Butter Sauce

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter (divided)
  • 4 cloves garlic, minced
  • 1 tsp fresh rosemary (or thyme), chopped (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Prepare the Potatoes: Wash and peel the potatoes, then cut them into 1-inch cubes. Place the cubed potatoes in a microwave-safe bowl, add a pinch of salt, and microwave on high for 5-7 minutes until they are slightly tender. Drain and set aside.
  2. Cook the Steaks: Season steaks generously with salt, pepper, and paprika on both sides. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add steaks and cook about 4-5 minutes per side for medium-rare or longer to desired doneness. Remove steaks and let rest.
  3. Cook the Potatoes: In the same skillet, add remaining tablespoon of olive oil. Add cubed potatoes, season with salt, pepper, and onion powder if using. Cook, stirring occasionally, for 8-10 minutes until golden brown and crisp on the outside and tender inside. Cover with a lid if needed to soften the potatoes.
  4. Make the Garlic Butter Sauce: Push the cooked potatoes to one side of the skillet. Add butter in the empty space and melt over medium heat. Add minced garlic and cook 1-2 minutes until fragrant, stirring to prevent burning.
  5. Combine Steak and Potatoes: Slice steaks into strips or cubes. Add them back to the skillet and toss well with the potatoes and garlic butter sauce to coat evenly.
  6. Finish and Serve: Sprinkle chopped rosemary or thyme over the top if desired. Garnish with fresh parsley and serve immediately for the best flavor and texture.

Notes

  • Microwaving the potatoes before frying helps speed up the cooking process and ensures they become tender inside while crisping on the outside.
  • You can substitute rosemary with thyme or omit herbs if preferred.
  • Adjust steak cooking time according to thickness and your preferred doneness.
  • For a lower fat version, reduce olive oil and butter slightly or use a cooking spray.
  • Serve with a side salad or steamed veggies for a complete meal.
