Ingredients
Scale
For the Chicken Bites
- 1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Extra Parmesan for garnish
For the Creamy Herb Sauce
- 1 tablespoon butter
- 2 cloves garlic, minced
- ½ cup chicken broth
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh herbs (such as parsley, chives, or thyme)
- Salt and black pepper to taste
Instructions
- Season the Chicken: In a bowl, toss the chicken pieces with garlic powder, Italian seasoning, salt, pepper, and Parmesan cheese until evenly coated.
- Cook the Chicken: Heat olive oil and butter in a large skillet over medium-high heat until sizzling. Arrange the chicken pieces in a single layer and cook for 4–5 minutes, flipping once halfway through, until golden brown and cooked through.
- Add Garlic and Parsley: Add minced garlic to the skillet and cook for 30 seconds until fragrant. Toss in fresh parsley and sprinkle additional Parmesan if desired, then remove the chicken from the skillet and set aside.
- Prepare the Sauce: Reduce heat to medium and melt butter in the same skillet. Add minced garlic and sauté for 30 seconds. Pour in chicken broth and let it simmer for 2–3 minutes to reduce slightly.
- Finish the Sauce: Stir in heavy cream, Parmesan cheese, Dijon mustard, and lemon juice. Continue to simmer until the sauce thickens slightly. Then add chopped fresh herbs and adjust seasoning with salt and pepper to taste.
- Combine Chicken and Sauce: Return the cooked chicken bites to the skillet and toss to coat thoroughly in the creamy herb Parmesan sauce.
- Serve: Serve the chicken bites warm, garnished with extra Parmesan cheese if desired. This dish pairs wonderfully with pasta, rice, mashed potatoes, or roasted vegetables.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- This dish pairs perfectly with mashed potatoes or steamed green beans.
- Use fresh Parmesan for best flavor.
- Make sure not to overcrowd the skillet to ensure even cooking and browning of chicken bites.
