Ingredients

1 cup orzo pasta

1 tbsp olive oil

2 tbsp unsalted butter

3 cloves garlic, minced

1 bunch asparagus, trimmed and cut into 1-inch pieces

1/4 tsp salt

1/4 tsp black pepper

1/4 cup grated Parmesan cheese

Juice of 1/2 lemon

2 tbsp chopped fresh parsley or basil (optional)

2-4 tbsp reserved pasta water (as needed for creaminess)
Instructions

Cook the orzo:
Bring a pot of salted water to a boil. Add orzo and cook according to package directions until al dente. Reserve 1/4 cup pasta water, then drain and set aside. -
Sauté the asparagus:
While orzo cooks, heat olive oil and 1 tablespoon of the butter in a large skillet over medium heat. Add asparagus and cook for 3–4 minutes until tender-crisp. Add garlic and cook for another 1 minute until fragrant. -
Combine everything:
Add the cooked orzo to the skillet with the asparagus. Stir in the remaining tablespoon of butter, Parmesan, lemon juice, and enough reserved pasta water to create a light, creamy sauce. Season with salt and pepper to taste. -
Garnish and serve:
Sprinkle with fresh herbs and serve warm as a side dish or vegetarian main.
