Description

This Garlic Butter Asparagus Orzo is a simple yet elegant dish made with tender orzo pasta, sautéed asparagus, and rich garlic butter. It’s creamy, fresh, and perfect as a side for chicken, fish, or as a light vegetarian main. Ready in under 30 minutes and full of flavor!


Ingredients

  • 1 cup orzo pasta

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 bunch asparagus, trimmed and cut into 1-inch pieces

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup grated Parmesan cheese

  • Juice of 1/2 lemon

  • 2 tbsp chopped fresh parsley or basil (optional)

  • 2-4 tbsp reserved pasta water (as needed for creaminess)


Instructions

  1. Cook the orzo:
    Bring a pot of salted water to a boil. Add orzo and cook according to package directions until al dente. Reserve 1/4 cup pasta water, then drain and set aside.

  2. Sauté the asparagus:
    While orzo cooks, heat olive oil and 1 tablespoon of the butter in a large skillet over medium heat. Add asparagus and cook for 3–4 minutes until tender-crisp. Add garlic and cook for another 1 minute until fragrant.

  3. Combine everything:
    Add the cooked orzo to the skillet with the asparagus. Stir in the remaining tablespoon of butter, Parmesan, lemon juice, and enough reserved pasta water to create a light, creamy sauce. Season with salt and pepper to taste.

  4. Garnish and serve:
    Sprinkle with fresh herbs and serve warm as a side dish or vegetarian main.


Notes

  • Add grilled chicken, shrimp, or salmon for a heartier meal.

  • Stir in a splash of cream or a spoonful of cream cheese for a richer version.

  • Leftovers reheat well—just add a splash of water to loosen the sauce.
