Cookie Layer

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips


Instructions

  1. Prepare Brownie Layer: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. In a bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla extract, mixing until combined. Sift in the flour, cocoa powder, baking soda, and salt, and stir until no streaks remain. Fold in the chocolate chips and set aside.
  2. Prepare Cookie Layer: In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract and mix until well combined. Stir in the flour, baking soda, and salt, then fold in the chocolate chips.
  3. Assemble and Bake: Spread the brownie batter evenly into the prepared baking pan’s bottom. Gently dollop and spread the cookie dough on top of the brownie layer. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
