  2. Make the cobbler topping: While the peaches are baking, in a medium bowl whisk together the flour, remaining 1/2 cup granulated sugar, baking powder, and salt until well mixed. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter in until the mixture looks like coarse crumbs. Next, stir in the boiling water just until the dough comes together.
