Description

This Freakin’ Fantastic Fried Rice is a quick and easy meal made with day-old rice, fresh vegetables, and scrambled eggs, all tossed in a flavorful combination of soy sauce and sesame oil. Perfect for a satisfying weeknight dinner or a tasty side dish.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 2 eggs, scrambled
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the oil: Heat vegetable oil in a large skillet or wok over medium-high heat to prepare for cooking the vegetables and eggs.
  2. Cook vegetables: Add the diced carrots and peas to the skillet. Cook for 2–3 minutes until they become tender but still crisp.
  3. Scramble the eggs: Push the cooked veggies to one side of the pan. Crack the eggs on the other side and scramble them until fully cooked.
  4. Add rice: Add the day-old cooked rice to the skillet and stir everything together, combining the eggs and vegetables evenly.
  5. Season and stir-fry: Pour in the soy sauce, sesame oil, and sprinkle black pepper over the mixture. Stir-fry for 4–5 minutes until the rice is heated through and evenly coated with the sauce.
  6. Serve: Serve the fried rice hot as a delicious standalone dish or as a complement to your meal. Enjoy!

Notes

  • Using day-old rice is recommended for best texture and to avoid sogginess.
  • You can substitute or add other vegetables like chopped bell peppers, onions, or corn.
  • For added protein, consider adding cooked chicken, shrimp, or tofu.
  • Adjust soy sauce quantity to taste, especially if using low-sodium soy sauce.
  • Sesame oil adds a rich nutty flavor; omit or substitute with a neutral oil if desired.
