1/2 cup cottage cheese

3 large eggs, separated

1/4 tsp cream of tartar

1/4 tsp salt (optional)

1 tsp honey or maple syrup (optional, for slight sweetness)
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
Blend cottage cheese: In a food processor or blender, blend cottage cheese until completely smooth. Set aside.
Whip egg whites: In a clean bowl, add egg whites and cream of tartar. Beat until stiff peaks form (3–4 minutes).
Mix yolks and cheese: In a separate bowl, whisk egg yolks, blended cottage cheese, salt, and honey (if using) until combined.
Fold gently: Add about 1/3 of the egg whites to the yolk mixture and gently fold to lighten the batter. Then fold in the rest of the whites until just combined — don’t overmix.
Scoop and shape: Spoon batter onto the prepared baking sheet in 6 even rounds, smoothing the tops with the back of a spoon.
Bake: Bake for 25–30 minutes or until puffed and golden. Let cool for 5–10 minutes.
