Transfer the chicken to a cutting board and allow it to rest for 5 minutes to retain its juices. Then slice the chicken thinly.
- Toast the Rolls: Slice the telera or bolillo rolls in half horizontally. Toast the cut sides in a skillet or toaster until the edges turn golden and lightly crisp, enhancing the texture and flavor of the sandwich base.
- Spread the Bases: Spread the refried beans evenly on the bottom half of each toasted roll. On the top half, spread the mayonnaise or crema to add creaminess and tang.
