Description

A hearty and flavorful one-pot soup made with ground beef, beans, corn, tomatoes, and taco seasoning – perfect for a quick and comforting meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (1 oz) packet taco seasoning
  • 1 (1 oz) packet ranch dressing mix
  • 1 1/2 cups water or beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips

Instructions

  1. In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until beef is browned and onion is soft. Drain excess fat.
  2. Add black beans, kidney beans, corn, diced tomatoes, Rotel, taco seasoning, ranch mix, and water or broth to the pot.
  3. Stir to combine and bring to a boil.
  4. Reduce heat and simmer for 20–25 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.

  • Use ground turkey or chicken as a leaner alternative.
  • Soup freezes well for up to 3 months.
  • Add more broth if you prefer a thinner consistency.
