- 1 lb ground beef
- 1 small onion, chopped
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 (1 oz) packet taco seasoning
- 1 (1 oz) packet ranch dressing mix
- 1 1/2 cups water or beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips
Instructions
- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until beef is browned and onion is soft. Drain excess fat.
- Add black beans, kidney beans, corn, diced tomatoes, Rotel, taco seasoning, ranch mix, and water or broth to the pot.
- Stir to combine and bring to a boil.
- Reduce heat and simmer for 20–25 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.

- Use ground turkey or chicken as a leaner alternative.
- Soup freezes well for up to 3 months.
- Add more broth if you prefer a thinner consistency.
