Ingredients
Scale
Omelet Mixture
- 6 large eggs
- 1/4 cup milk
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup diced onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For Greasing
- Olive oil or cooking spray
Instructions
- Preheat and prepare pan. Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or a small baking dish with olive oil or cooking spray to prevent sticking.
- Mix ingredients. In a medium bowl, whisk together the eggs and milk until the mixture is smooth and well combined. Stir in the chopped spinach, crumbled feta cheese, diced onion, garlic powder, salt, and black pepper evenly.
- Fill baking cups. Pour the prepared egg mixture evenly into the greased muffin cups or baking dish, filling each about three-quarters full to allow space for the omelets to rise.
- Bake. Place the muffin tin or baking dish in the oven and bake for 18 to 22 minutes, or until the eggs are set and the tops turn lightly golden.
- Cool and serve. Remove from the oven and let the omelets cool slightly before taking them out of the pan. Serve warm or at room temperature for a satisfying breakfast or snack.
Notes
- Great for meal prep—store in the refrigerator for up to 4 days and reheat as needed.
- Add chopped tomatoes, bell peppers, or cooked bacon for extra flavor variations.
- Frozen spinach can be used as a shortcut; just be sure to thaw and drain it well before adding.
