Description

  • 1 lb boneless, skinless chicken breasts or thighs, cut into strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar or Mexican cheese blend
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup salsa or hot sauce
  • 1/4 cup chopped lettuce or spinach
  • 4 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chicken, chili powder, paprika, cumin, cayenne (if using), salt, and pepper. Cook for 6–8 minutes until browned and cooked through.
  2. Warm tortillas in a microwave or on a skillet to make them pliable.
  3. Lay each tortilla flat and layer with rice, black beans, cooked chicken, cheese, sour cream, salsa, and lettuce.
  4. Fold in the sides and roll tightly into a burrito.
  5. Optional: Grill or toast the burrito seam-side down in a skillet for 1–2 minutes for a crispy finish.
  6. Serve hot with extra salsa or guacamole on the side.

Notes

  • Use rotisserie chicken for a faster version.
  • Adjust the spice level by adding more or less cayenne or using spicy salsa.
  • Add diced avocado, jalapeños, or sautéed peppers for extra flavor.
