  • 1 teaspoon sriracha or chili garlic sauce (optional)
  • 2 cloves garlic (minced)
  • 1/2 cup hot water
  • 1 cup shredded carrots or chopped vegetables (optional)
  • 1 tablespoon vegetable oil

Instructions

  1. Cook the Noodles: Prepare the instant ramen noodles according to the package instructions, making sure to discard the seasoning packets. Once cooked, drain the noodles thoroughly and set them aside.
  2. Make the Peanut Sauce: In a small bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, optional sriracha, minced garlic, and hot water until the sauce is smooth, creamy, and well combined.
  3. Sauté Vegetables: Heat the vegetable oil in a large skillet or pan over medium heat. Add the shredded carrots or any chopped vegetables you’re using and sauté for 2 to 3 minutes until they start to soften but still retain some crunch.
  4. Toss Noodles with Sauce: Add the cooked ramen noodles to the skillet with the sautéed vegetables. Pour the prepared peanut sauce over the noodles and toss everything together thoroughly. Continue to cook and toss for about 2 minutes until the noodles are evenly coated and heated through.
  5. Garnish and Serve: Remove the skillet from heat. Garnish the peanut butter ramen with sliced green onions and toasted sesame seeds. Serve immediately while warm.
