Ingredients
Scale
Dry Ingredients
- 1 1/2 cups granulated sugar
- 1/4 cup cocoa powder
- 3 cups quick oats
- Pinch of salt
Wet Ingredients
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla extract
Instructions
- Prep: Line a baking sheet with parchment or wax paper to prevent the cookies from sticking and to make cleanup easier.
- Cook the Mixture: Melt the unsalted butter in a medium saucepan over medium heat. Stir in granulated sugar, milk, cocoa powder, and a pinch of salt. Bring the mixture to a boil, stirring constantly to prevent burning. Allow it to boil for 1-2 minutes to properly dissolve the sugar and thicken the mixture.
- Combine Ingredients: Remove the saucepan from heat. Quickly stir in the peanut butter and vanilla extract until the mixture is smooth and well combined. Then add the quick oats and mix thoroughly to evenly coat the oats with the chocolate-peanut butter mixture.
- Shape the Cookies: Using a spoon, scoop spoonfuls of the mixture and drop them onto the prepared baking sheet, forming individual cookie shapes.
- Set: Allow the cookies to cool and set at room temperature for 30 minutes to 1 hour, until firm enough to handle and enjoy.
Notes
- Ensure you boil the mixture for the full 1-2 minutes to achieve the right texture and prevent the cookies from being sticky.
- Quick oats are preferred for a softer texture; use old-fashioned oats for a chewier cookie but adjust mixing time accordingly.
- For a nuttier flavor, substitute peanut butter with almond or cashew butter.
- Store cookies in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
