Description

These Easy Lemon Bars feature a buttery shortbread crust topped with a tangy and sweet lemon filling, perfect for a refreshing dessert or snack.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour, divided
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2/3 cup freshly squeezed lemon juice (about 3-4 lemons)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a medium bowl, cream together the softened butter and 1/2 cup sugar until light and fluffy.
  3. Mix in 2 cups flour and salt until well combined. Press the dough evenly into the bottom of the prepared pan to form the crust.
  4. Bake the crust for 15-20 minutes, or until lightly golden.
  5. While the crust is baking, whisk together the eggs, 1 1/2 cups sugar, 1/4 cup flour, and lemon juice in a separate bowl until smooth.
  6. Pour the lemon mixture over the hot crust as soon as it comes out of the oven.
  7. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
  8. Allow the bars to cool completely in the pan. Once cool, dust with powdered sugar if desired.
  9. Cut into squares and serve. Store any leftovers in the refrigerator.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • For a thicker crust, reduce the pan size slightly.
  • The bars are easier to cut when fully chilled.
