This Easy Homemade Mayonnaise recipe is made with avocado oil for a light, neutral flavor and creamy texture. It’s healthier than store-bought versions and comes together in just a few minutes with simple ingredients.

- 1 large egg (room temperature)
- 1 tablespoon lemon juice or apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1 cup avocado oil
Instructions
- Place the egg, lemon juice, mustard, and salt in a tall, narrow container or jar (wide enough for an immersion blender).
- Pour the avocado oil over the top—do not stir.
- Insert the immersion blender all the way to the bottom of the container. Turn it on and keep it still for 10–15 seconds until the mixture at the bottom emulsifies and thickens.
- Slowly move the blender upward to incorporate the rest of the oil until the entire mixture is thick and creamy.
- Taste and adjust seasoning as needed. Store in an airtight container in the refrigerator for up to 1 week.
Notes
- Use room temperature ingredients for best results.
- If the mayo doesn’t thicken, try blending again with an extra egg yolk.
- You can add garlic, herbs, or spices for a flavored variation.
- Make sure the egg is very fresh, or use pasteurized eggs if concerned about raw eggs.
