This Easy Hamburger Rice Casserole is a simple, satisfying meal made with ground beef, rice, cheese, and a creamy sauce. Everything comes together in one casserole dish for a no-fuss dinner the whole family will love. It’s great for make-ahead meals and freezer-friendly too!
Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp paprika (optional)

1 cup uncooked white rice (or brown rice, cooked)

1 (10.5 oz) can cream of mushroom soup

1 (10.5 oz) can cream of chicken soup

1 1/2 cups beef broth or water

1 cup shredded cheddar cheese (plus more for topping)

Optional: 1/2 cup frozen peas or mixed veggies
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Brown the beef: In a skillet over medium heat, cook ground beef and onion until beef is no longer pink. Drain excess fat. Add garlic, salt, pepper, and paprika.
Mix the casserole: In a large bowl, combine the cooked beef mixture, uncooked rice, soups, broth, and cheese. Stir in peas or veggies if using.
Pour into baking dish: Spread mixture evenly in the greased dish. Cover tightly with foil.
Bake covered for 45–50 minutes, until rice is tender.
Uncover and top with cheese: Sprinkle more shredded cheese on top and return to the oven, uncovered, for 5–10 minutes until cheese is melted and bubbly.
Let rest for 5 minutes before serving.

Use pre-cooked rice and reduce broth to 3/4 cup for a quicker bake time (25–30 minutes).
