- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 (15 oz) can diced tomatoes, undrained
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn (optional)
- 1/2 cup shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté onion and bell pepper for 4–5 minutes until soft.
- Add garlic and cook for 30 seconds.
- Add ground turkey and cook until browned.
- Stir in taco seasoning and cook for 1 minute.
- Add diced tomatoes, black beans, and corn. Simmer for 5–7 minutes.
- Season with salt and pepper to taste.
- Top with shredded cheese, cover, and let melt.
- Garnish with cilantro or green onions and serve.
Notes
- Use no-salt-added canned goods for a lower sodium version.
- Great as taco filling or served over rice.
- Store leftovers in an airtight container for up to 4 days.
- Freeze for up to 3 months for meal prep.
