This Easy Crockpot Chicken Spaghetti is a creamy, comforting one-pot meal perfect for busy days. Tender chicken breasts are slow-cooked with a blend of cream soups, diced tomatoes with green chilies, and flavorful seasonings, then mixed with spaghetti noodles and melted cheddar cheese for a satisfying family dinner.

Chicken and Sauce

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1/2 cup diced onion
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Pasta and Cheese

  • 8 oz spaghetti noodles (uncooked)
  • 2 cups shredded cheddar cheese
  • Chopped parsley for garnish (optional)


Instructions

  1. Prepare the Crockpot Base: Place the chicken breasts in the bottom of the crockpot. Add cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, diced onion, chicken broth, garlic powder, and black pepper. Stir gently to combine the sauces evenly around the chicken.
  2. Cook the Chicken: Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is thoroughly cooked and tender enough to shred easily.
  3. Shred the Chicken: Remove the chicken breasts from the crockpot. Using two forks, shred the chicken into bite-sized pieces, then return the shredded chicken back into the crockpot.
  4. Add and Cook Spaghetti: Break the spaghetti noodles in half and stir them into the crockpot mixture. Cover and cook on high for an additional 20–30 minutes, stirring occasionally, until the pasta is tender.
  5. Mix in Cheese and Serve: Stir in the shredded cheddar cheese until fully melted and combined. Garnish with chopped parsley if desired. Serve warm for a hearty and comforting meal.

Notes

  • For extra creaminess, stir in 4 oz of softened cream cheese along with the cheddar cheese.
  • You can substitute rotisserie chicken to save time; if doing so, reduce the initial cook time accordingly.
