- 3–4 lb chuck roast
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 carrots, peeled and cut into chunks
- 4 potatoes, cut into chunks
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat oven to 325°F (165°C).
- Season chuck roast generously with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4–5 minutes per side.
- Remove roast and set aside. In the same pot, sauté onions and garlic for 2–3 minutes until fragrant.
- Add tomato paste, Worcestershire sauce, and beef broth. Stir to combine and bring to a simmer.
- Return the roast to the pot, nestle carrots and potatoes around it, and spoon some broth over the top.
- Cover and transfer to the oven. Roast for 3–3.5 hours, or until meat is fork-tender.
- Remove from oven, rest for 10 minutes, then shred or slice and serve with vegetables and pan juices.
Notes
- Can be made in a slow cooker on LOW for 8 hours or HIGH for 4–5 hours.
- Add celery or mushrooms for extra flavor and variety.
- Leftovers are great for sandwiches, tacos, or soup.
- For a thicker gravy, remove roast and veggies, then simmer broth with a cornstarch slurry.
