Description

This Easy Chuck Roast Recipe is a classic, no-fuss comfort food dish made with tender beef, hearty vegetables, and a savory, flavorful broth. Perfect for slow roasting, this one-pot meal is ideal for Sunday dinners or cozy weeknights.


Ingredients

  • 34 lb chuck roast
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, cut into chunks
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season chuck roast generously with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  3. In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4–5 minutes per side.
  4. Remove roast and set aside. In the same pot, sauté onions and garlic for 2–3 minutes until fragrant.
  5. Add tomato paste, Worcestershire sauce, and beef broth. Stir to combine and bring to a simmer.
  6. Return the roast to the pot, nestle carrots and potatoes around it, and spoon some broth over the top.
  7. Cover and transfer to the oven. Roast for 3–3.5 hours, or until meat is fork-tender.
  8. Remove from oven, rest for 10 minutes, then shred or slice and serve with vegetables and pan juices.

Notes

  • Can be made in a slow cooker on LOW for 8 hours or HIGH for 4–5 hours.
  • Add celery or mushrooms for extra flavor and variety.
  • Leftovers are great for sandwiches, tacos, or soup.
  • For a thicker gravy, remove roast and veggies, then simmer broth with a cornstarch slurry.
