Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened, about 3–4 minutes.
- Add cauliflower and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until cauliflower is very tender.
- Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
- Stir in milk or cream if using. Season with salt and pepper to taste.
- Heat through and serve warm, garnished with herbs if desired.
