Description

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head cauliflower (about 6 cups florets), chopped
  • 4 cups vegetable or chicken broth
  • 1/2 cup milk or cream (optional for creaminess)
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened, about 3–4 minutes.
  2. Add cauliflower and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until cauliflower is very tender.
  3. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  4. Stir in milk or cream if using. Season with salt and pepper to taste.
