Description

A quick and creamy beef queso dip that’s packed with flavor. Made with ground beef, cheese, and a perfect blend of spices, this dip is perfect for game day, parties, or just as a tasty snack.

Ingredients

Units Scale
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a large skillet, cook the ground beef over medium heat, breaking it up into small pieces as it cooks. Once browned, drain any excess fat.
  2. Add the chopped onion to the skillet and cook for 2-3 minutes, until softened.
  3. Stir in the diced tomatoes with green chilies, garlic powder, chili powder, cumin, salt, and pepper. Let the mixture simmer for 3-4 minutes to allow the flavors to blend.
  4. Add the cream cheese to the skillet, stirring until it melts and incorporates into the mixture.
  5. Slowly add the shredded cheddar cheese, stirring continuously until the cheese has melted and the dip is smooth.
  6. Pour in the milk and stir until the dip reaches your desired consistency (add more milk for a thinner dip or less for a thicker dip).
  7. Continue to cook the dip for another 2-3 minutes, stirring occasionally, until it’s hot and creamy.
  8. Serve the beef queso dip warm with tortilla chips for dipping. Enjoy!

Notes

  • You can customize this dip by adding more spices like paprika, cayenne pepper, or hot sauce for extra heat.
  • For a smoother dip, you can use a hand blender to blend the mixture once the cream cheese and cheese have melted.
  • If you prefer a lighter version, you can substitute ground turkey for beef and use low-fat cheese and cream cheese.
