  • 2 tablespoons olive oil

  • 2 cups mushrooms, sliced (button or cremini mushrooms work well)
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the chicken breasts and cook for 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the sliced mushrooms and cook for 3-4 minutes, until they release their juices and begin to brown.
  4. Add the minced garlic and dried thyme to the skillet and cook for another 1-2 minutes until fragrant.
  5. Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Let the broth simmer for 2-3 minutes.
  6. Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for another 3-4 minutes until it thickens slightly.
  7. Return the chicken breasts to the skillet and spoon the mushroom sauce over the top. Cook for an additional 2-3 minutes to heat the chicken through and allow the flavors to meld together.
  8. Remove from heat and garnish with freshly chopped parsley. Serve immediately with your favorite side dishes, such as rice, potatoes, or vegetables.
