- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the chicken breasts and cook for 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set it aside.
- In the same skillet, add the sliced mushrooms and cook for 3-4 minutes, until they release their juices and begin to brown.
- Add the minced garlic and dried thyme to the skillet and cook for another 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Let the broth simmer for 2-3 minutes.
- Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for another 3-4 minutes until it thickens slightly.
- Return the chicken breasts to the skillet and spoon the mushroom sauce over the top. Cook for an additional 2-3 minutes to heat the chicken through and allow the flavors to meld together.
- Remove from heat and garnish with freshly chopped parsley. Serve immediately with your favorite side dishes, such as rice, potatoes, or vegetables.
Notes
- For extra richness, you can add a splash of white wine to the sauce before adding the chicken broth.
- If you prefer a lighter version, you can substitute the heavy cream with half-and-half or a non-dairy cream alternative.
