Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners to prevent sticking and for easy removal.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and granulated sugar until they are thoroughly combined and free of lumps.
- Add Wet Ingredients: Create a well in the center of the dry mixture and pour in the room temperature eggs, whole milk, vegetable oil, and vanilla extract. Gently mix until just combined to avoid overworking the batter which can affect texture.
- Fill Cups & Insert Bunny: Spoon the batter into each cupcake liner, filling them about two-thirds full. Carefully press one small chocolate bunny into the center of each cupcake, embedding it in the batter.
- Top Batter & Bake: Cover each chocolate bunny with additional batter to fully enclose it. Bake the cupcakes in the preheated oven for 18-20 minutes or until a toothpick inserted near the edges (not touching the bunny) comes out clean, indicating they are fully baked.
- Cool & Serve: Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy the surprise hidden inside with each bite!
