Easter Basket Cookies are a fun and festive treat, perfect for spring celebrations. These colorful, no-bake cookies are shaped like little baskets, filled with sweet candy ‘eggs,’ and topped with a buttery, sweet coating.

- 1 cup sweetened shredded coconut
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 2 cups mini marshmallows
- 2 cups chow mein noodles (or crispy fried noodles)
- 1/2 cup pastel-colored candy eggs (e.g., jelly beans or mini chocolate eggs)
- 1/4 cup green candy melts or white chocolate (optional, for basket handles)
Instructions
- In a large mixing bowl, combine the shredded coconut, melted butter, granulated sugar, and vanilla extract. Stir until the mixture is smooth.
- In a microwave-safe bowl, melt the mini marshmallows in the microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Pour the melted marshmallows into the coconut mixture and stir well to combine.
- Add the chow mein noodles to the mixture, gently stirring to coat the noodles with the marshmallow-coconut mixture.
- Using your hands or a spoon, scoop out small portions of the mixture and form into little nests on a parchment-lined baking sheet. Press a small indentation in the center of each nest to create a ‘basket’ shape.
- Place the nests in the fridge for about 30 minutes to set and firm up.
- Once the nests have set, fill each basket with pastel-colored candy eggs of your choice. If desired, melt green candy melts or white chocolate and pipe a handle over the top of each basket to complete the look.
- Serve the Easter Basket Cookies immediately, or store them in an airtight container for up to 3 days.
Notes
- Feel free to mix and match different types of candy for the ‘eggs,’ such as chocolate eggs or jelly beans, to make the baskets more colorful and festive.
- If you prefer a different shape, you can also mold the mixture into small balls or clusters.
- If you don’t have chow mein noodles, you can substitute with other crispy, crunchy noodles or even pretzel sticks for a different texture.
