- ½ cup white wine vinegar
- 2 Tbsp lime juice
- 1 Tbsp Dijon mustard
- 1 tsp kosher salt
- ¼ tsp black pepper
- 1 tsp honey
- 1 shallot, finely chopped

Salad
- 8 cups corn kernels
- 2 pints cherry or grape tomatoes, halved
- 1 bunch green onions, chopped
- 2 Tbsp fresh basil, chopped
- 2 Tbsp fresh chives, chopped
- 2 Tbsp fresh parsley, chopped
Instructions
- Prepare the dressing: Combine the white wine vinegar, lime juice, Dijon mustard, kosher salt, black pepper, honey, and finely chopped shallot in a mason jar. Let it sit for 10 minutes to soften the shallot, which will mellow its flavor and infuse the dressing.
- Emulsify the dressing: Add the olive oil to the jar with the vinegar mixture. Secure the lid tightly and shake vigorously for 30 seconds to fully combine the ingredients and create a smooth vinaigrette.
- Combine the salad ingredients: In a large mixing bowl, add the corn kernels, halved cherry or grape tomatoes, chopped green onions, and all the chopped fresh herbs including basil, chives, and parsley. Mix thoroughly to evenly distribute the flavors.
- Toss with dressing: Pour the prepared vinaigrette over the salad ingredients and toss well to coat everything evenly with the dressing.
- Serve or chill: The salad can be served immediately at room temperature to enjoy the fresh, crisp flavors or covered and refrigerated to allow the flavors to meld, serving it chilled if preferred.
