Meat Mixture

- 1 small onion, diced
- 1 (1 oz) packet taco seasoning
- ½ cup water
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
- 1 (10 oz) can cream of chicken or cream of mushroom soup
- 1 cup sour cream
Cheese & Chips
- 2 cups shredded cheddar or Mexican blend cheese
- 1 (9.75 oz) bag nacho cheese Doritos, crushed slightly

Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Meat and Onions: In a large skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked. Drain any excess grease to keep the dish from being too oily.
- Season Meat Mixture: Add the taco seasoning and water to the skillet, stir well, and let it simmer for about 2–3 minutes to blend the flavors.
- Add Creaminess and Tomatoes: Stir in the drained diced tomatoes with green chilies, cream of chicken or mushroom soup, and sour cream until the mixture is smooth and well combined.
- Layer Doritos and Meat: Spread half of the crushed Doritos evenly across the bottom of the prepared baking dish. Then spoon the beef mixture over the chips and spread it out evenly.
- Add Cheese and Chips: Sprinkle 1 cup of shredded cheese evenly on top of the beef layer. Then add the remaining crushed Doritos, topping them with the remaining cup of cheese.
- Bake the Casserole: Place the casserole in the oven and bake uncovered for 20–25 minutes, until the dish is bubbly and the cheese is melted and golden.
- Serve: Remove from the oven and top with your choice of diced tomatoes, green onions, jalapeños, sour cream, or cilantro. Serve hot and enjoy!
