Description

Delicious Cherry Pie Bites are mini treats featuring a crisp, golden refrigerated pie crust filled with a thickened cherry filling. Perfect for parties or a sweet snack, these bite-sized morsels combine the classic flavors of cherry pie in easy-to-eat portions baked to perfection.

Ingredients

Scale

Pie Crust

  • 1 package refrigerated pie crusts

Filling

  • 1 can cherry pie filling (about 21 oz)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping

  • 1 tablespoon sugar (optional, for topping)

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Cut pie crust circles: Unroll the refrigerated pie crusts and use a cookie cutter or a glass to cut out small circles approximately 2 inches in diameter.
  3. Thicken cherry filling: In a small saucepan, combine cherry pie filling, cornstarch, and water. Heat over medium heat, stirring constantly until the filling thickens, about 3-4 minutes. Remove from heat and let the mixture cool slightly.
  4. Line muffin cups: Place each pie crust circle into the mini muffin tin, gently pressing them to fit into the cups evenly.
  5. Fill crusts: Spoon a small amount of the slightly cooled cherry filling into each pie crust-lined muffin cup.
  6. Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the crusts turn golden brown and the cherry filling is bubbly.
  7. Add topping and cool: Optionally sprinkle sugar on top of each pie bite while still warm. Allow the cherry pie bites to cool for a few minutes before serving.

Notes

  • Use refrigerated pie crusts for convenience and quick preparation.
  • Ensuring the cherry filling is thickened before baking prevents soggy crusts.
  • You can substitute sugar topping with a light dusting of powdered sugar if preferred.
  • Let bites cool slightly to set the filling and avoid burns.
  • Mini muffin liners make clean-up easier and keep the bites looking tidy.
