These Delicious & Nourishing Date & Nut Energy Bars are a perfect homemade snack packed with natural sweetness and wholesome ingredients like dates, nuts, oats, and nut butter. They make for an energizing treat that is easy to prepare and ideal for a quick breakfast or on-the-go snack.

Ingredients

Scale

Dry Ingredients

  • 1 cup dates, pitted
  • 1 cup nuts (almonds, walnuts, or any mix)
  • 1/2 cup oats
  • 1/4 teaspoon sea salt

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (almond or peanut)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Combine Ingredients: In a food processor, add the dates, nuts, oats, honey or maple syrup, nut butter, vanilla extract, and sea salt.
  3. Blend Mixture: Blend all ingredients until the mixture is well combined and sticky enough to hold together.
  4. Prepare Baking Pan: Line a baking pan with parchment paper or lightly grease it, then press the blended mixture evenly into the pan to form a compact layer.
  5. Bake: Bake the mixture in the preheated oven for 15-20 minutes until it turns golden brown around the edges.
  6. Cool and Cut: Allow the baked mixture to cool completely in the pan before cutting it into bars for serving.

Notes

  • You can substitute nuts with your favorite varieties like pecans or cashews.
  • For a vegan option, use maple syrup instead of honey.
  • Make sure to cool the bars fully before cutting to maintain their shape.
  • Store bars in an airtight container in the refrigerator to keep fresh for up to a week.
  • Add a pinch of cinnamon or cocoa powder to the mixture for additional flavor variations.
