Description

Dark Chocolate Truffles are rich, bite-sized confections made with smooth ganache and coated in cocoa powder or toppings of your choice, perfect for gifting or indulging.


Ingredients

  • 8 oz dark chocolate (60-70% cacao), finely chopped
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional coatings: unsweetened cocoa powder, chopped nuts, shredded coconut, or melted chocolate

Instructions

  1. Place the chopped dark chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. Pour the hot cream over the chocolate and let sit for 2–3 minutes to melt.
  4. Stir gently until smooth and fully combined. Add vanilla extract and a pinch of salt, and stir again.
  5. Cover and refrigerate the ganache for 1–2 hours until firm enough to scoop.
  6. Using a small spoon or melon baller, scoop out portions and roll into balls using your hands.
  7. Roll the truffles in your choice of coatings (cocoa powder, nuts, coconut, etc.).
  8. Store truffles in the refrigerator in an airtight container. Bring to room temperature before serving.

  • Use high-quality chocolate for best flavor and texture.
  • Wear gloves when rolling to avoid melting from hand heat.
  • Flavor the ganache with liqueurs like Grand Marnier or coffee extract for variations.
