- 8 oz dark chocolate (60-70% cacao), finely chopped
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
- Optional coatings: unsweetened cocoa powder, chopped nuts, shredded coconut, or melted chocolate
Instructions
- Place the chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- Pour the hot cream over the chocolate and let sit for 2–3 minutes to melt.
- Stir gently until smooth and fully combined. Add vanilla extract and a pinch of salt, and stir again.
- Cover and refrigerate the ganache for 1–2 hours until firm enough to scoop.
- Using a small spoon or melon baller, scoop out portions and roll into balls using your hands.
- Roll the truffles in your choice of coatings (cocoa powder, nuts, coconut, etc.).
- Store truffles in the refrigerator in an airtight container. Bring to room temperature before serving.
Notes
- Use high-quality chocolate for best flavor and texture.
- Wear gloves when rolling to avoid melting from hand heat.
- Flavor the ganache with liqueurs like Grand Marnier or coffee extract for variations.
