Description

Cucumber Feta Salad is a light and refreshing dish made with crisp cucumbers, creamy feta cheese, and a tangy vinaigrette. Perfect as a side dish or a quick summer meal.

Ingredients

Units Scale
  • 2 large cucumbers, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 3/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh dill (optional)

Instructions

  1. In a large bowl, combine sliced cucumbers, red onion, and cherry tomatoes.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Gently fold in the crumbled feta cheese and chopped dill, if using.
  5. Chill in the refrigerator for 15-20 minutes before serving for best flavor.

Notes

  • English cucumbers work best for their low seed content and crispness.
  • Add olives or avocado for extra flavor and texture.
  • For a stronger flavor, let the salad marinate longer in the fridge.
